Recipe

10 minutes | 12 toasts

Ingredients

Crust

  • 8 pitted dates

  • 1 cup almonds + pecans

  • 1/2 cup unsweetened shredded coconut

Cheesecake

  • 2 cups soaked raw cashews

  • 2 1/2 Tbsp coconut oil

  • 1/2 cup full fat coconut milk

  • 2 Tbsp lemon juice

  • 1/4 cup coconut nectar

  • 1/4 cup cacao powder

Directions

  1. Blend together crust ingredients. Roll into balls + press into a greased cupcake tin.

  2. Blend together cheesecake ingredients + pour on top of crust.

  3. Top each with a blackberry + freeze for at least an hour. Let thaw for a couple minutes to make them easier to remove from the tin. Enjoy!
