Very Berry Pancakes

A perfect weekend breakfast / brunch recipe OR to meal prep for the week ahead.

A great balance of protein + healthy fat to refuel or to start your day! This recipe has ground flax seed for brain-boosting omega-3s + maca powder for hormone balancing effects.

Gluten-free, full of protein, fiber, + healthy fat, and can be made vegan!

Recipe

15 minutes | 2 large pancakes

Ingredients

  • 3/4 cup oats

  • 1/2 cup almonds

  • 1 scoop Vital Proteins collagen peptides (leave out for vegan)

  • 3 Tbsp ground flax

  • 1 Tbsp coconut oil

  • 2 tsp cinnamon

  • 2 tsp maca powder

  • water until desired consistency

  • Toppings:

    • frozen raspberries (for a sauce), fresh strawberries, pumpkin seeds, cacao nibs

Directions

  1. Mix all ingredients together. Heat a skillet over medium-high heat. Add coconut oil. Pour batter into skillet and cook evenly on both sides (flip when batter starts to bubble).

  2. For raspberry sauce: In a small saucepan heat frozen raspberries until it forms a sauce.

  3. Top pancake with toppings.

  4. Enjoy!
